Monday Munchies – Baked Spinach Puffs with Soft-Boiled Eggs

The Spring weather has finally made its way to us! I'm so excited for warmer days and sunshine, gardening and taking daily walks. I love Spring! Anyway, today is focused on a delicious recipe that is probably one of my favorites. I'm not a huge fan of sweet breakfasts. I just feel very lethargic and blah after a sugary-sweet breakfast. Savory, healthy breakfasts make me feel energized and satisfied. I love this recipe so much that I wanted to share it with you.


Adapted from one of my favorite recipe books, Italy Today, these baked spinach nests are served over puff pastry and topped with a soft-boiled egg. They are so good, you could probably eat all 4 of them at one time. Buon appetito!


Baked Spinach Puffs with Soft-Boiled Egg


Ingredients:

  • 3-lb. spinach

  • 5 Tablespoons butter

  • 1 Tablespoon olive oil

  • 2 Tablespoons Parmesan cheese

  • 3 cloves garlic

  • Salt and pepper to taste

  • Puff pastry (I used Pepperidge Farm Puff Pastry Sheets)

  • 3 eggs

Directions:

  • Place the spinach leaves in a pot of salted water and bring to a boil over medium heat. Cook, turning the leaves occasionally, until tender, about 5 minutes. Drain, squeeze dry thoroughly, and chop.

  • Preheat the oven to package instructions.

  • Put the chopped spinach back into the pot with butter, oil, and garlic. Cook, stirring often. Remove from the heat and mix in the Parmesan cheese as well as salt and pepper to taste. Set aside.

  • Lay out the puff pastry and cut into six equal rectangles. Lay on a baking sheet and top with the spinach. Place in the oven and bake for about 15 minutes, or according to package instructions.

  • Meanwhile, place a pot of water on the stove and bring to a simmer. Gently add the eggs, lowering the temperature to medium-low heat and set the timer for 8 minutes.

  • Immediately drain and place in cold water. Remove the eggs and peel them. Slice the eggs in half and set each half on top of the spinach puffs.


This is the BEST cookbook ever, with the BEST Italian recipes! It is because of this cookbook that I fell in love with sardines and anchovies (which are extremely healthy for you). But, all of the traditional recipes are absolutely delicious! If you like Mediterranean food, you'll love this cookbook.
