Last week I tried making chia pudding for the first time in a very long time. The last time I made it, it wasn't a huge hit. The texture was just weird and the flavor was a little off. However, I know that chia seeds are super good for you, so I wanted to try again and found a delicious recipe!

High in antioxidants
High in fiber
Low in carbs
Great plant-protein source
Helps in weight-loss
High in calcium, magnesium, and phosphorus for strong bones
Great for detoxification
High in zinc for healthy, glowing skin
Reduce the risk for several diseases including colon cancer and diabetes
And they're gluten-free
With that said, I have found the best chia pudding recipe! I love the taste, the color, even the texture. I recommend having this for breakfast or post-workout snack. Here's the recipe:
Roasted Plum & Raspberry Chia Pudding
Makes 6 servings
Ingredients:
1/2 cup raw cashews or walnuts
3 large red plums, pitted and quartered
4 Tablespoons honey
1 1/2 cups fresh raspberries, plus more for garnish
2 teaspoons vanilla extract
2 Tablespoons coconut butter
6 Tablespoons chia seeds
Directions:
Soak the cashews in cold, filtered water for about 2-4 hours. Drain, rinse, and drain again.
Preheat the oven to 400 degrees. Arrange the plum quarters in a single layer in a baking dish and roast for 20 minutes, or until soft and juicy. Set aside and allow to cool.
Blend the raspberries, honey, vanilla, and 1 1/2 cups filtered water in a blender until smooth. Add the plums, coconut butter, and nuts and blend until completely smooth. Transfer to a bowl and whisk in chia seeds.
Refrigerate for 1-2 hours or until chilled. We ate it slightly warm and it improved the texture because the chia seeds weren't able to get as big and slimy. Serve with a garnish of raspberries.

This recipe was a hit all around and was approved by picky pallets. The raspberries and plums together were divine and created a lovely purple color which was fun to eat. We didn't think that the original 3 Tablespoons of honey was sweet enough so feel free to add more to taste.
