Phew! It's been a busy week getting things ready for Christmas! We've been packaging cookies and chocolates for friends and family, decorating, sending Christmas cards, baking, baking, and more baking. Now that things have calmed down a little, I hope to continue writing until Christmas day.
Today I wanted to share one of my favorite recipes during the holiday season...sugar cookies! I love sugar cookies. There is something about them that brings back warm childhood memories and makes me deliriously happy. Sure, gingerbread cookies are delicious and the epitome of Christmas. However, sugar cookies remain my favorites.
I figured with the holidays around the corner it would be fun to share some not-so-healthy recipes, because why not? It's always fun to splurge a little and treat yourself for a special occasion. So, without further ado, enjoy this recipe!
Sugar Cookies
Ingredients:
3 cups flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, softened
1 cup sugar
1 egg, beaten
1 Tablespoon milk
Directions:
Sift the flour, baking powder, and salt together in a bowl. Set aside.
Place the butter and sugar in a large bowl and beat until light in color. Add the egg and milk and beat until combined.
Put your mixer on low speed and gradually add the flour mixture. Beat until the mixture pulls away from the side of the bowl.
Divide the dough in half, wrap in cling wrap or wax paper, and refrigerate for 2 hours.
Preheat your oven to 375 degrees.
Sprinkle your surface where you will roll out your dough with some flour. Unwrap one half of your dough and roll out to about 1/4-inch thick. Make sure your dough is not sticking to the surface by using a little more flour. Cut out your shapes with cookie cutters and place on a baking sheet. Chill the cut dough in the refrigerator for 10 minutes.
Remove your chilled cut-outs and place in the oven for 7-9 minutes or until the cookies are just beginning to turn brown around the edges. Cool and decorate as desired.
For the icing, we used a simple royal icing recipe of powdered sugar, meringue powder, and water, but you can do any type of icing for the decoration. This recipe came from Food Network and tastes amazing!
