Guess what? This week is chocolate week!
Why chocolate week? Because who doesn't like chocolate?
In honor of this special week, I wanted to share one of my absolute favorite chocolate granola recipes. This recipe comes from one of my very favorite cookbooks, The Vintage Tea Party Book by Angel Adoree. The greatest part of this recipe, other than the fact that it is delectable, is that it has lots of wonderful minerals in it.
Cocoa powder is rich in minerals such as potassium, phosphorus, magnesium, and calcium as well as vitamins such as B vitamins, vitamin E, vitamin K, zinc, iron, and sodium. The flavonoids in the cocoa help lower high blood pressure and the antioxidants help neutralize free radicals in the body. You will also be happy to know that cocoa powder also helps regulate blood sugar levels. There are many other amazing benefits to this wonderfully tasty bean!
Chocolate Coconut Granola

Ingredients:
240g (8 1/2oz) rolled oats
175g (6oz) flaked almonds
70g (2 1/2oz) shredded, unsweetened coconut
70g (2 1/2oz) dark brown sugar
40g (1 1/2oz) unsweetened cocoa powder
90ml (3fl oz) honey
50ml (2fl oz) coconut oil
1 teaspoon ground cinnamon
1/4 teaspoon sea salt
Dark chocolate chips (optional)
Directions:
Preheat the oven to 250F.
In a large bowl, mix the oats, almonds, coconut, brown sugar, and chocolate chips. In a separate bowl, mix the cocoa powder, honey, oil, cinnamon, and salt.
Combine the 2 mixtures and pour on to 2 baking sheets. Bake the granola for 1 1/4 hours, stirring every 15 minutes to achieve an even color.
Cool and transfer to a large bowl to serve.
Try this recipe and tell me if it's not the best chocolate granola you've ever tasted. Stick to raw cocoa powder and organic oats to keep things even healthier. Be prepared to sit on the couch and each the whole bowl. Don't say I didn't warn you!
