Monday Munchies - Best Healthy Cookies Ever!

My family loves these cookies! They are such a huge hit that I can't believe I actually got a picture of them before they were devoured. What I love about these cookies is that they are healthier for you but they also are great for a quick snack or breakfast. They are loaded with seeds, oats, dried fruit, and of course, chocolate. Below you will find two different recipes (both of which are delicious), one is gluten-free and the other uses apple sauce. Bob's Red Mill Applesauce Muesli Cookies

Ingredients:

  • 1 egg

  • 1 cup Old Country Style Muesli

  • 3/4 cup brown sugar

  • 1/2 teaspoon sea salt

  • 3/4 cup whole wheat flour

  • 3/4 cup chocolate chips (or you can chop some of your own like I did)

  • 1/2 teaspoon vanilla extract

  • 2/3 cup applesauce

  • 1/2 teaspoon baking soda

Directions:

  • Preheat the oven to 375 degrees.

  • Sift the flour, baking soda, and salt together and set aside.

  • Blend the applesauce, sugar, and vanilla together. Beat in the egg.

  • Add the flour mixture and mix. Stir in the muesli and chocolate chips.

  • Drop by Tablespoons on a lightly greased or lined cookie sheet and bake for 10-12 minutes.



Bob's Red Mill Gluten-Free Muesli Cookies

Ingredients:

  • 1 cup unsalted butter, softened

  • 1 cup sugar

  • 1 teaspoon sea salt

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 2 1/4 cups Gluten Free All Purpose Baking Flour

  • 3/4 teaspoon xanthan gum

  • 1 1/2 teaspoon baking powder

  • 1/2 teaspoon ground ginger

  • 1/2 teaspoon ground allspice

  • 2 cups Gluten Free Muesli

Directions:

  • Preheat the oven to 350 degrees.

  • Cream the butter, sugar, and salt until just combined.

  • Add the eggs and vanilla extract and mix to combine.

  • Sift together the flour, xanthan gum, baking powder, and spices. Add to the butter mixture and mix slightly. Add the muesli and continue to mix until thoroughly combined.

  • Scoop the cookies onto a lightly greased or lined cookie sheet and bake for 15-17 minutes until the edges are slightly browned.

  • Let the cookies cool slightly before removing them from the pan.
