Truffle Energy Bites

I love snacks that satisfy my sweet tooth but are also healthy for me. These truffles are made with dates which offers the sweetness, almonds provide some protein, and cocoa makes them taste like regular chocolate truffles. This recipe comes from Alpha Foodie, a wonderful food blog that I will link at the end of this post.


Truffle Energy Bites

Ingredients:

  • I cup raw almonds

  • 1/2 cup raw, unsweetened cocoa powder

  • 8 medjool dates

  • 1 Tbsp. almond milk

  • 1/2 tsp. cinnamon

  • 1 tsp. vanilla extract

Directions:

In a food processor, pulse the almonds and dates until they form a sticky ball. Add the rest of the ingredients and pulse a little bit longer. Roll them into balls and dust/roll in cocoa powder.

I like to store these in the fridge for up to 1 week (though they don't last that long).
