You know I can't go a full week without sharing at least one recipe. I always post something food related when I'm hungry, and I'm pretty hungry right now. The recipe I'm sharing with you today is probably one of my very favorites. I love chicken tenders! Especially when they're homemade. I also love avocados! We are going to combine both of my loves in one simple, yet amazingly tasty recipe from Kim's Healthy Eats. Bon appetit!
Baked Chicken Tenders & Avocado Dipping Sauce
Ingredients:
Chicken Tenders-
1 lb. chicken tenders or boneless chicken breast (cut into tenders)
1/2 cup flour
1 egg, beaten
1 cup panko bread crumbs
Salt and pepper to taste
Avocado Dipping Sauce-
1 avocado, peeled and pitted
1/2 lime, juiced
Salt to taste
1 Tablespoon Greek yogurt or sour cream
1/3-1/2 cup water
Directions:
Preheat your oven to 350 degrees. Cover a baking sheet with parchment and set aside.
Put the flour in one bowl, the beaten egg in another bowl, and the panko bread crumbs in a third bowl. Add salt and pepper to the panko bowl.
Dry the chicken (this prevents the coating from slipping off) and dip in the flour until lightly coated. Then dip into the egg and finally, into the panko.
Place the chicken in a single layer on the baking sheet and bake for about 15-20 minutes, depending on the thickness of the chicken.
While the chicken is baking, place all the dip ingredients in a food processor and pulse until smooth.
Stream the water in until desired consistency is achieved. Enjoy!
I like to experiment with spices in the breading for chicken tenders. I recommend that you try different combinations in the panko bread crumbs (thyme, smoked salt, paprika, etc.). If you don't like avocado, here is a great honey mustard recipe that you can make instead.
Honey Mustard Dipping Sauce
Ingredients:
1/2 cup mayonnaise
1/4 cup mustard (I prefer Dijon)
4-6 Tablespoons honey, depending on desired sweetness
1/2 Tablespoon rice wine vinegar
Dash of salt
Pinch of cayenne pepper (optional)
Directions:
Combine all ingredients in a bowl. Add more honey and salt to achieve desired taste. Enjoy!
