Monday Munchies - Avocado Breakfast Flatbread

Every time I write one of these posts, I am always hungry and drooling over the recipes I share with you. :) Today I am sharing a delicious breakfast recipe that is full of good fats, protein, and delicious flavor! I don't like flatbread normally, but this one is definitely a keeper. Enjoy!


Avocado Breakfast Flatbread

Ingredients:

  • 4 flatbreads (or pita)

  • 2 ripe avocados

  • 2 teaspoons butter

  • Green onions, sliced

  • 4 teaspoons olive oil

  • 1/2 squeezed lime

  • 2 slices roma tomatoes

  • 4 eggs

  • Fresh herbs (thyme, oregano, rosemary, etc.)

  • Sea salt

  • Black pepper

Directions:

  • Heat the flatbread in a saute pan with olive oil until each side is golden and warm. Set aside for topping.

  • Mask the avocado with a fork and spread on the flatbread. Top with tomatoes.

  • Fry the eggs with butter until the whites are set but the yolk is still runny. Season with salt, pepper, and herbs.

  • Top the flatbread with the eggs, onions, and lime juice.

This recipe will help you get your day started off right by providing you with energy. I also recommend adding whatever extra ingredients you wish. I love capers or maybe some shredded cheese that can be just slightly melted. Whatever speaks to you.
