Monday Munchies - Avocado Greek Salad

I hope you have been enjoying the recipes that I've been sharing with you. Every time I write a food-related post, I find myself getting hungry :). Today's post is no exception. This salad is delicious and is filled with healthy fats that will keep you full and satisfied throughout the day. Let me know what you think.


Avocado Greek Salad

Ingredients:

Dressing-

  • 1/4 cup olive oil

  • 2 Tablespoons red wine vinegar

  • 1 garlic clove, minced

  • 2 teaspoons dried oregano

  • 1/4 teaspoon salt

Salad-

  • 1 large cucumber, halved lengthwise and sliced

  • 4 tomatoes, cut into wedges

  • 1 green pepper, seeded and sliced

  • 1/2 red onion, sliced thinly

  • 7 oz. feta cheese, crumbled

  • 1/2 cup pitted Kalamata olives

  • 1 large avocado, diced

Directions:

  • Whisk together the dressing ingredients in a small bowl or jar.

  • Mix the salad ingredients together in a large bowl. Gently toss with the dressing and season with salt if needed. Serve and sprinkle some fresh oregano on top. Add chicken for more protein or some boiled eggs.
