This meal is one of my favorites because it doesn't take very long to make and it is so delicious. With the weather getting cooler, mac & cheese is the perfect comfort food. What makes this meal healthier is the cauliflower and rice pasta. It is completely gluten-free and extra cheesy. Enjoy!
Cauliflower Mac & Cheese
Ingredients:
3 cups rice macaroni pasta
2 cups cauliflower florets
2 Tablespoons unsalted butter
2 Tablespoons gluten-free flour
1 cup half and half, or milk
2 ounces cream cheese
2 teaspoons Dijon mustard
1/2 teaspoon garlic powder
1 cup shredded cheddar cheese
1/2 cup Greyer cheese
pinch of sea salt and pepper
Directions:
Preheat the oven to 375 degrees.
Cook the pasta according to the directions on the bag. Steam the cauliflower until soft.
Melt the butter in a pot and whisk in the flour until browned, about 1 minute. Gradually whisk in the half and half/milk. Whisk constantly until thickened, add cream cheese, mustard, and garlic powder, about 2 minutes.
Stir in the Greyer cheese and half of the cheddar until melted. Season with salt and pepper to taste.
Stir in the cauliflower and macaroni until coated. Pour into a baking dish and sprinkle with the remaining cheese.
Bake until bubbly, about 12-15 minutes. Serve immediately (don't worry, you won't have leftovers ;) )
