Monday Munchies - Cauliflower Mac & Cheese

This meal is one of my favorites because it doesn't take very long to make and it is so delicious. With the weather getting cooler, mac & cheese is the perfect comfort food. What makes this meal healthier is the cauliflower and rice pasta. It is completely gluten-free and extra cheesy. Enjoy!


Cauliflower Mac & Cheese

Ingredients:

  • 3 cups rice macaroni pasta

  • 2 cups cauliflower florets

  • 2 Tablespoons unsalted butter

  • 2 Tablespoons gluten-free flour

  • 1 cup half and half, or milk

  • 2 ounces cream cheese

  • 2 teaspoons Dijon mustard

  • 1/2 teaspoon garlic powder

  • 1 cup shredded cheddar cheese

  • 1/2 cup Greyer cheese

  • pinch of sea salt and pepper

Directions:

  • Preheat the oven to 375 degrees.

  • Cook the pasta according to the directions on the bag. Steam the cauliflower until soft.

  • Melt the butter in a pot and whisk in the flour until browned, about 1 minute. Gradually whisk in the half and half/milk. Whisk constantly until thickened, add cream cheese, mustard, and garlic powder, about 2 minutes.

  • Stir in the Greyer cheese and half of the cheddar until melted. Season with salt and pepper to taste.

  • Stir in the cauliflower and macaroni until coated. Pour into a baking dish and sprinkle with the remaining cheese.

  • Bake until bubbly, about 12-15 minutes. Serve immediately (don't worry, you won't have leftovers ;) )
