Monday Munchies - Cinnamon Crunch Banana Bread

I am the breakfast gal in my family, which means that I get to experiment with many different recipes. One of my favorite things to do for breakfast is bake. I love baking muffins, quick-breads, donuts, etc. Banana bread is a family favorite here so I would like to share a delicious recipe that tastes amazing! Thanks to Savory Nothings for the recipe.


Cinnamon Crunch Banana Bread

Ingredients:

  • 2 eggs

  • 1 cup mashed banana

  • 3/4 cup sugar (coconut sugar for a healthier substitute)

  • 1/3 cup coconut oil

  • 1/2 cup Greek yogurt

  • 1 3/4 cups flour

  • 1/4 cup organic cornstarch

  • 2 teaspoons cinnamon

  • 1 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

Topping:

  • 1/2 cup flour

  • 1/2 cup brown sugar

  • 1 teaspoon cinnamon

  • 1/4 cup butter

Directions:

  • Heat the oven to 350 degrees and grease a loaf pan.

  • Whisk together all wet ingredients in a large bowl. Sprinkle the flour, cornstarch, cinnamon, baking powder, and salt on top. Gently fold it in making sure to not overmix!

  • For the crumb topping, place the flour, sugar, and cinnamon in a medium bowl. Rub in the butter with you fingertips until crumbs form.

  • Place the batter in the prepared loaf tin and evenly sprinkle with the topping.

  • Bake for 55-60 minutes, or until a toothpick inserted comes out clean. Enjoy!
