I am the breakfast gal in my family, which means that I get to experiment with many different recipes. One of my favorite things to do for breakfast is bake. I love baking muffins, quick-breads, donuts, etc. Banana bread is a family favorite here so I would like to share a delicious recipe that tastes amazing! Thanks to Savory Nothings for the recipe.
Cinnamon Crunch Banana Bread
Ingredients:
2 eggs
1 cup mashed banana
3/4 cup sugar (coconut sugar for a healthier substitute)
1/3 cup coconut oil
1/2 cup Greek yogurt
1 3/4 cups flour
1/4 cup organic cornstarch
2 teaspoons cinnamon
1 1/2 teaspoon baking powder
1/4 teaspoon salt
Topping:
1/2 cup flour
1/2 cup brown sugar
1 teaspoon cinnamon
1/4 cup butter
Directions:
Heat the oven to 350 degrees and grease a loaf pan.
Whisk together all wet ingredients in a large bowl. Sprinkle the flour, cornstarch, cinnamon, baking powder, and salt on top. Gently fold it in making sure to not overmix!
For the crumb topping, place the flour, sugar, and cinnamon in a medium bowl. Rub in the butter with you fingertips until crumbs form.
Place the batter in the prepared loaf tin and evenly sprinkle with the topping.
Bake for 55-60 minutes, or until a toothpick inserted comes out clean. Enjoy!
