I am not a huge fan of eggs. I don't know why, I just don't particularly love them. However, this is one recipe that I absolutely love for breakfast. It is probably the only omelet I will ever willingly eat from now on. Ever since I bought my copy of Julia Child's recipe book, I've been experimenting with all sorts of different French meals.
Today, I am going to share this really easy breakfast (or lunch...or dinner) recipe with you. If you like omelets, you will definitely like this. If you like goat cheese, you will definitely like this. If you don't like either of those...well, I guess you'll just have to take my word for it and try it. ;)
French Omelet
Ingredients:
2 eggs
2-4 ounces of herbed goat cheese
Fresh chives
Butter for the skillet
Directions:
Whisk together the eggs with the goat cheese.
Melt about 2 Tablespoons of butter on a skillet warmed on medium-low heat.
When the butter starts to bubble slightly, pour the egg mixture into the pan and swirl it around to cover the bottom of the skillet.
Chop some fresh chives over the top and cook until the egg is cooked through.
Tilt the skillet away from you and slowly start rolling the egg over itself and onto a plate.
This recipe is extremely easy and contains a great amount of protein to start your day off right. Pair with some whole grain or sourdough toast and strawberries, and you will have the perfect breakfast!
