Monday Munchies - Greek Chicken Gyros

Lately I've been posting a lot of sweeter recipes but starting today I am going to post more savory recipes. My family loves to explore different types of food from different countries. Our favorite foods come from the Mediterranean (Italy, France, and Greece). Today I am sharing one of my favorite meals from Greece. Kali orexi!


Greek Chicken Gyros (Yee-ro)

Ingredients for the Chicken:

  • 1 lb. chicken tenders

  • 1 Tablespoon Greek seasoning (oregano, mint, thyme, basil, marjoram, onion powder, and garlic powder)

  • Salt and pepper

  • 1 Tablespoon olive oil

Ingredients for the Tzatziki (tsa-tseekee) Sauce:

  • 1 cup Greek yogurt

  • 1 medium cucumber, peeled and grated

  • 1 clove of garlic, minced

  • 1 Tablespoon olive oil

  • 1 Tablespoon fresh lemon juice

  • 1 Tablespoon fresh dill, chopped

  • 1 Tablespoon fresh parsley, chopped

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

Ingredients for Serving:

  • Greek pitas flatbreads

  • 1 cucumber, peeled and diced

  • 1 cup grape tomatoes, diced

  • 1/2 cup red onion, diced

  • 1/2 cup Feta cheese

  • Fresh parsley, chopped

Directions:

  • Blend all the Tzatziki sauce ingredients in a food processor until smooth. Cover and chill until ready to serve.

  • Season the chicken with the Greek seasoning, salt, and pepper. Cook over medium-high heat in a skillet or grill for 5-6 minutes on each side until cooked through.

  • Remove from the skillet/grill and brush the chicken lightly with olive oil. Cover with foil and allow to rest 10 minutes before slicing into strips.

  • Assemble the gyros by topping each pita with chicken, cucumber, tomatoes, red onions, fresh parsley, Feta cheese, and Tzatziki sauce. Enjoy!
