Lately I've been posting a lot of sweeter recipes but starting today I am going to post more savory recipes. My family loves to explore different types of food from different countries. Our favorite foods come from the Mediterranean (Italy, France, and Greece). Today I am sharing one of my favorite meals from Greece. Kali orexi!

Greek Chicken Gyros (Yee-ro)
Ingredients for the Chicken:
1 lb. chicken tenders
1 Tablespoon Greek seasoning (oregano, mint, thyme, basil, marjoram, onion powder, and garlic powder)
Salt and pepper
1 Tablespoon olive oil
Ingredients for the Tzatziki (tsa-tseekee) Sauce:
1 cup Greek yogurt
1 medium cucumber, peeled and grated
1 clove of garlic, minced
1 Tablespoon olive oil
1 Tablespoon fresh lemon juice
1 Tablespoon fresh dill, chopped
1 Tablespoon fresh parsley, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
Ingredients for Serving:
Greek pitas flatbreads
1 cucumber, peeled and diced
1 cup grape tomatoes, diced
1/2 cup red onion, diced
1/2 cup Feta cheese
Fresh parsley, chopped
Directions:
Blend all the Tzatziki sauce ingredients in a food processor until smooth. Cover and chill until ready to serve.
Season the chicken with the Greek seasoning, salt, and pepper. Cook over medium-high heat in a skillet or grill for 5-6 minutes on each side until cooked through.
Remove from the skillet/grill and brush the chicken lightly with olive oil. Cover with foil and allow to rest 10 minutes before slicing into strips.
Assemble the gyros by topping each pita with chicken, cucumber, tomatoes, red onions, fresh parsley, Feta cheese, and Tzatziki sauce. Enjoy!
