I was in a chocolatey mood today so I decided to share a delicious, healthy chocolate pudding recipe. The reason this pudding is healthy is because you are using raw, unprocessed cocoa as well as coconut sugar. The cocoa is rich in antioxidants and minerals and the coconut sugar is lower on the glycemic index so you will not experience as strong of a spike in blood sugar levels.
Healthy Chocolate Pudding
Ingredients:
1 egg
2 1/4 cup whole milk, divided
2/3 cup coconut sugar
1/8 teaspoon sea salt
2/3 cup unsweetened, raw cocoa powder
2 Tablespoons organic cornstarch
1 teaspoon vanilla extract
Directions:
Lightly beat the egg with a fork in a medium bowl.
Combine 1 1/2 cups of milk, 1/3 cup of sugar, and salt in a medium saucepan and bring to a simmer over medium heat. Stir occasionally.
Meanwhile, whisk the remaining 1/3 cup of sugar, cocoa, and cornstarch in a medium bowl. Whisk in the remaining 3/4 cup of milk until blended. Whisk the simmering milk mixture into the cocoa mixture. Pour the mixture back into the pan and bring to a simmer over medium heat, whisking constantly, until thickened and glossy. Remove from the heat.
Whisk about 1 cup of the hot cocoa mixture into the beaten egg. Return the egg mixture to the pan and cook over medium-low heat, whisking constantly, until steaming and thickened (do not boil!). Whisk in vanilla and serve warm.
This recipe would be great for a girl's night in or just for a delicious treat after dinner. You can also make some homemade whipped cream to put on top by whipping heavy cream and a little bit of powdered sugar. I hope you enjoyed today's recipe!
