Monday Munchies - Healthy Desserts

Sorry for the delay in posts, I have been blissfully enjoying my vacation in sunny Florida the past two weeks and I'm back to regular posting. To get back into the swing of things, here are wonderfully delicious desserts that you're sure to love. Bon appetite!

I have the biggest sweet tooth! Any time I can find a healthy way to make certain desserts, I get very excited. Today I am sharing three easy and delicious sweet treats that I hope you will enjoy.


3-Ingredient Chocolate Cookies

Ingredients:

2 very ripe bananas

1 cup gluten-free oats

2 large Tablespoons unsweetened cocoa

Optional mix-ins-

Chocolate chips

Cocao nibs

Chopped nuts

Coconut flakes

Ground flax seeds

Vanilla

Dried fruit

Directions:

Preheat your oven to 350 degrees and line a baking sheet with parchment paper.

Mash the bananas and mix in the cocoa and oats until you get a cookie dough-like batter. The mixture will seem dry, but keep mixing it and it should become more cohesive.

Place cookie dough balls onto the cookie sheet and flatten them down. Bake the cookies for 10-15 minutes, let cool, and enjoy!


Clean Strawberry Dole Whip

Ingredients:

4 cups frozen strawberries

1/2 cup milk (almond, coconut, or whole)

1-2 teaspoons honey or maple syrup

1 teaspoon lemon juice

Pinch of sea salt

Directions:

Combine all ingredients and blend until smooth.

You can either scoop the mixture in a plastic bag, freeze for 10 minutes, and pipe into a cup or bowl or you can freeze the mixture for 10 minutes and scoop into a cup or bowl.


Frozen Yogurt Bark with Berries

Ingredients:

2 cups pain yogurt

1/4 cup honey or maple syrup

1/2 teaspoon pure vanilla extract

1/4 teaspoon lemon juice

Pinch of sea salt

Strawberries, sliced

Blueberries

Raspberries

Chopped pecans (optional)

Directions:

Line a baking sheet/dish with parchment paper.

Combine the yogurt, honey, vanilla, lemon juice, and salt; whisking thoroughly until combined.

Pour into the baking dish and spread until even. Top with berries and nuts.

Freeze for 2-3 hours or until firm, cut into pieces, and serve.
