Monday Munchies - Healthy "Nice Cream" Bites

Summer is the perfect time to indulge in ice cream and other frozen treats. Try replacing some of the unhealthy choices with healthy ones in order to keep your body healthy and happy. These "nice cream" bites are delicious and low in sugar, have healthy fats, and satisfy your sweet tooth perfectly.


Banana "Nice Cream" Bites

Ingredients:

  • 3 bananas

  • 1 vanilla bean pod or 1/2 teaspoon vanilla bean powder

  • 1/4 cup full-fat coconut milk

  • 2 cups dark chocolate

  • 1/4 cup coconut oil

  • 3/4 cup crispy rice cereal

Directions:

  1. Cut the bananas into slices, put into a freezer safe Ziploc bag, and freeze until solid.

  2. In a food processor or blender, blend the frozen bananas, vanilla bean, and coconut milk until smooth.

  3. Line an 8x8 baking dish with parchment paper and evenly distribute the "nice cream" into the dish.

  4. Freeze for at least two hours.

  5. Melt the chocolate and coconut oil in a bowl over a pot of simmering water, stirring every few minutes until fully melted.

  6. Let the chocolate cool and add crispy rice cereal; mix well.

  7. Lift the parchment paper out of baking dish to remove the "nice cream."

  8. Cut the "nice cream" into small cubes and dip into the chocolate mixture until evenly coated.

  9. Place the bites on a tray and freeze.

  10. Enjoy!

These little bites can be kept in the freezer for up to a month (though I don't see that happening. You know they will be gone before you know it).
