This morning we had some delicious muesli cookies for breakfast. I would have taken some pictures, but they were eaten so quickly that I didn't have a chance :). Not to worry though, they looked exactly like the picture below. Every time I make these cookies, they are instantly eaten up because they are so incredibly good! Muesli is great because it has whole oats, seeds for protein, dried fruit, and crispy rice for crunch. It feels like you're cheating for breakfast, but it's actually a great alternative to a bowl of oatmeal. Bon appetit!
Bob's Red Mill Muesli Cookies
Ingredients:
1 egg
1 cup Bob's Red Mill Old Country Style Muesli
3/4 cup brown sugar
1/2 teaspoon salt
3/4 cup organic whole wheat flour
1/2 teaspoon vanilla extract
1/2 cup unsalted butter, softened
1/2 teaspoon baking soda
3/4 cup chocolate chips
Directions:
Heat the oven to 375 degrees.
Sift the flour, baking soda, and salt together and set aside. Blend the butter, sugar, and vanilla in a separate bowl. Beat in egg. Add the flour mixture and mix.
Stir in muesli and chocolate chips. Drop by teaspoons on a parchment paper lined cookie sheet.
Bake for 10-12 minutes.
If you like chocolate chip cookies, you will love this healthier alternative. If you're like me and you don't like eating seeds, you'll love the fact that you can't even taste them. I usually scoop the cookies large (Tablespoon) and bake them for about 11 minutes. This allows them to cook properly and get nice and crunchy on the outside. Yum!
