With all the candy that I ate yesterday for Easter, my body is craving some delicious vegetables and "real" food. This recipe is one of my absolute favorites! I could eat this salad every single day and it wouldn't get old. I hope you enjoy it as much as I do!
Radish Cucumber Salad
Ingredients:
1 English cucumber, thinly sliced
2 bunches radishes, thinly sliced
1 bunch scallions, chopped
3/4 cup sour cream
3/4 teaspoon salt, or to taste
Directions:
In a medium salad bowl, combine the cucumbers, radishes, and green onions.
In a small bowl, mix together the sour cream and salt.
Stir the sour cream dressing into the salad just before serving. The longer it sits, the more liquidy the dressing becomes because the salt draws out the natural water from the cucumbers.
I can't tell you how delicious this is and how much my mouth is watering just thinking about it. Maybe I'll have to make some ;).
