I thoroughly enjoyed the summery weather this weekend! I even put on my bathing suit and laid out in the sun for a couple of hours. With the weather finally starting to warm up, I think it's about time for us to start getting ready with delicious summery recipes. What is better than a tall glass of cool lemonade on a hot day? Today I am sharing a refreshing and yummy raspberry peach lemonade. Thanks to The Chunky Chef for this great recipe. Enjoy!
Raspberry Peach Lemonade
Ingredients:
Raspberry Peach Puree-
4 fresh peaches, pitted and diced
1 cup fresh raspberries
1 1/4 cups water
Simple Syrup-
1/2 cup granulated sugar
1/2 cup water
Lemonade-
7 cups cold water
1 1/4 cups fresh lemon juice (approx. 4 lemons)
Ice cubes
Additional raspberries for garnish, optional
Additional peach slices for garnish, optional
Mint sprigs for garnish, optional
Directions:
Add diced peaches, raspberries, and water to a food processor or blender and process until pureed.
Place a sieve over a large mixing bowl and pour the peach and raspberry puree into the sieve. Use the back of a large spoon to push the puree around so the liquid falls through the sieve and seeds/skin stay inside the sieve.
Discard the seeds/skin and set the mixing bowl with the puree liquid aside.
To make the simple syrup, mix the sugar and water together in a small saucepan and heat over medium heat until the sugar dissolves into the water, stirring occasionally. Boil for about 3 minutes until the liquid has become syrupy. Set aside to cool slightly.
To make the lemonade, mix together the water, lemon juice, and ice cubes in a pitcher. Stir to combine. Pour in the cooled simple syrup and peach and raspberry liquid. Stir to combine again.
Store covered in the refrigerator until ready to serve. Add the garnishes if desired.
