Today marks the start of a new series that I hope will be a long-running one. I decided it was better to post food-related posts on a certain day, not just whenever I feel like it. So Monday Munchies will now be the official day of all things food!
This week I will be sharing one of my favorite types of recipe...granola bars. I love experimenting with new protein/granola bar recipes. This one is full of protein and carbohydrates which makes it perfect for before or after your workout.
Healthy Protein Bars
Ingredients:
1/2 cup almond butter
1/3 cup almond milk
1/3 cup apple sauce
1/4 cup honey
1/4 cup dark chocolate
1 teaspoon vanilla extract
2 cups whole grain oats (or gluten-free oats)
1/3 cup almond flakes or slivers
1 cup protein powder (I recommend vanilla but you can also use chocolate)
1/4 cup dried cranberries
1/4 cup ground flaxseed
1 teaspoon cinnamon
Directions:
Place the almond butter, milk, apple sauce, honey, chocolate, and vanilla in a small saucepan and melt over medium-low heat and stir until incorporated.
Mix in the rest of the ingredients until fully incorporated. Pour the mixture into a parchment paper-lined baking pan (10 x 12) and press it down evenly.
Refrigerate for 20 minutes. Cut into bars and enjoy! These can be kept in a tightly sealed container, refrigerated, for up to 2 weeks.
