For the past week I've been on a short vacation enjoying the warm sunshine of Florida. Now I'm back to cold and dreary weather, ready for Thanksgiving and Christmas. These holidays are my favorite parts of Autumn and Winter. Without the festive foods, drinks, songs, family gatherings, etc., I feel that Winter would be much harder to bear.
Today I am going to share a delicious holiday treat-baked apples. They are healthy and perfect for eating in front of the fire while watching a Hallmark Christmas movie (I watched Engaging Father Christmas last night and it was lovely!). Is anyone else enjoying the Hallmark movies?
Brown Sugar Oatmeal Baked Apples
Ingredients:
4 large apples
1 cup oats
1 1/2 cups water
1 Tablespoon brown sugar + more to top
1/2 teaspoon cinnamon + more to top
1/4 cup raisins (optional)
Directions:
Preheat the oven to 375 degrees. Spray a baking dish with coconut oil nonstick spray.
Core the apples and remove part of the insides so that there is enough room for the filling.
Mix together the oats, water, brown sugar, cinnamon, and raisins (optional). Cook for 1-2 minutes on the stove top. Stuff the apples with the filling.
Bake the apples for about 30 minutes or until the apples are soft. Top with maple syrup as desired.
