Monday Munchies - Grilled Salmon with Avocado Salsa

I seem to be going the savory route the past few weeks, but starting next week, I'll start adding in some delicious (and healthy) sweets and snacks. Let me know if you have any suggestion on what you would like to see. Without further ado, bon appetit!


Grilled Salmon and Avocado Salsa

Ingredients:

  • 2 lbs salmon, cut into 4 pieces

  • 1 Tablespoon olive oil

  • 1 teaspoon salt

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1 teaspoon onion powder

  • 1/2 teaspoon ancho chili powder

  • 1 teaspoon black pepper

The Avocado Salsa-

  • 1 avocado, sliced

  • 1/2 small red onion, sliced

  • 2 limes, juiced

  • 1-2 Tablespoons finely chopped cilantro

  • Salt to taste

Instructions:

  • Mix the salt and spices together and rub the salmon with the olive oil and seasoning.

  • Refrigerate for 30 minutes to marinate.

  • Pre-heat the stove-top or grill.

  • Combine the salsa ingredients and refrigerate until needed.

  • Grill the salmon in a skillet or on the grill until done (about 5 minutes).

  • Top with the avocado salsa and serve immediately.
