Monday Munchies - Turmeric Coconut Flour Muffins

The trend here in my house is turmeric. Because of its great anti-inflammatory properties, we've been experimenting, trying to find new ways to use it in baked goods and hide the not-so-pleasant taste. On Saturday, we took a trip to D.C. and I tried a turmeric, ginger latte at Pete's Coffee. It was pleasantly surprising! I actually loved it and can't wait to try and duplicate it at home. The latte had the perfect amount of both ginger and turmeric so that it wasn't overpowering.


Today I am sharing a healthy, gluten-free muffin recipe that has turmeric, coconut flour, and maple syrup for sweetness. Just a little tip, if you are using turmeric for any reason, you always want to put a little ground pepper in with it to help with absorption. Your body absorbs the turmeric better when combined with the pepper.


Turmeric Coconut Flour Muffins (Gluten-Free, Dairy-Free)

Ingredients:

  • 6 eggs

  • 1/2 cup unsweetened coconut milk

  • 1/3 cup maple syrup

  • 1 teaspoon vanilla

  • 3/4 cup + 2 Tablespoons coconut flour

  • 1/2 teaspoon baking soda

  • 2 teaspoons turmeric

  • 1/2 teaspoon ginger powder

  • Pinch of salt and pepper

Directions:

  • Preheat the oven to 350 degrees and prepare a muffin tin.

  • In a large bowl, combine the eggs, milk, maple syrup, and vanilla. Mix until well combined and the eggs begin to bubble.

  • In a small bowl, sift together the flour, baking soda, and spices.

  • Slowly stir the dry ingredients into the wet ingredients until the batter is smooth and thick.

  • Transfer to the muffin tin, dividing the batter evenly.

  • Bake for 25 minutes, until slightly browned around the edges. Remove and cool.

For other great ways to use turmeric I recommend golden milk, Golden Cappuccino, or turmeric paste. The anti-inflammatory properties of this amazing root makes it one of the healthiest additives to your foods and drinks. It also helps protect your cells from free-radical damage, maintains healthy blood vessel lining, helps calm anxiety and depression, and boosts immunity. I also recommend this root for weight-loss clients because it helps with systemic inflammation of the joints and heart.
