I made these "cookies" earlier this week and they were successful! They passed my youngest brother's palette and that is something to be proud of. The banana's offer the slight sweetness and the strawberries are fresh and delicious. Though these healthy cookies did not make it into the book, I decided they were good enough to share with you anyway. Enjoy!
Strawberry-Banana Bites
Ingredients:
3 ripe bananas
2 cups rolled oats
½ cup apple sauce
1 teaspoon vanilla
Generous pinch nutmeg
1 teaspoon cinnamon
½ cup slivered almonds
6 fresh strawberries
Instructions:
Preheat the oven to 350 degrees.
In a large bowl, mash the bananas with a fork.
Add the oats, applesauce, vanilla, spices, and almonds. Stir thoroughly.
Cut the tops off the strawberries and finely chop or throw in a food processor and pulse 3-4 times. Add to the batter and mix until well blended.
Drop by rounded tablespoons onto a lined baking sheet and bake for 20 minutes, or until golden brown.
These cookies can be stored for up to a week in an air-tight container.
